Lunch Box Treats

Now that we are all back in school down in the southern hemisphere I thought I would show you what I pack for 'play lunch' in my kids school lunch boxes.

Chocolate Fudge Slice
I have found this slice to be the yummiest and the easiest to make and to pack. All the ingredients are generally a staple in your pantry.

So here goes.

Chocolate Fudge Slice

1 cup plain flour (all purpose)
1/2 cup sugar
1 cup coconut (dessicated)
1 tablespoon cocoa powder
185g butter, melted
1 teaspoon vanilla extract

Sift flour into a bowl, add sugar, coconut and cocoa. Add melted butter and vanilla. Stir until combined.

Press mixture into a slice tin (7" x 9")

Bake in moderate oven (180 degrees C) about 25 - 30 minutes.

Top with chocolate icing (recipe below)

1 cup icing sugar
2 tablespoons cocoa powder
1 oz butter
1 1/2 tablespoons hot water

Mix altogether and pour onto hot slice. Smooth over.

Cool in tin.

Sorry, about the measurements, I know they have both metric and imperial. I don't know how to convert and I have written this out from somewhere, probably an old PWMU book of my mums.

I can guarantee you that they will be asking for more.

And just because I have seen so many pictures of little preppies starting out on the first day of school, I thought you might like to see my middle son on his first day of secondary college. Age 12 and a half!!
